Chirashi sushi with vinegared rice folded with gomoku-ni (a five-ingredient mix of soy-sauce and mirin-simmered Koya tofu, shiitake, fried tofu, carrot, and hijiki), topped with kinshi tamago (shredded egg) and red pickled ginger.
